Recipe Sharing

On Sunday, I had baking fever and made a few recipes I had been wanting to try. They are all favorites now, so I thought I'd share.

#1: Whole wheat English muffins.
Even if you're not crazy about English muffins, you will LOVE these. They are easy and delicious!

#2: No-bake energy bites.
I would share a picture, but we gave some to my good friend who just had a baby girl and we (mostly I) ate the rest. Believe me, they are worth trying. And only 5 minutes of prep! We keep kept them in the freezer. The toasted coconut is a must, in my opinion. That yummy crunch is what makes them so addicting.

#3: Cinnamon-oat pancakes.
These have actually been a staple in our home for a year or so, but I made them recently for a lunch + freezer meal exchange with my friends, then made more that weekend for sunday dinner. They are hearty, healthy and yummy. They freeze well too.

My alterations: I use half whole wheat flour, half all-purpose. I usually use almond milk instead of cow's. I add a pinch more cinnamon than called for, add vanilla, and sometimes add a mashed ripe banana if I'm feelin' it. I also add a little water sometimes so they aren't so thick.

Just to add some man perspective to the 'health food', all 3 are actually amazing! I ate a few of the Cinnamon-oat pancakes for breakfast today, nice work babe!!

Kim! I love getting your recipes and Im definitely going to try all 3....for the toasted coconut in the energy bars did you just toast it yourself?

yummm!! homemade english muffins?? can't wait to try them. they all sound amazing! (even though i know from experience that the pancakes really are amazing!)

Kimmi, yeah it's easy to toast -- I just spread it on a little baking sheet and put it in my toaster oven at 350 on convection bake for like 4 mins. You can do it in a normal oven or broiler too. Just watch it closely because it browns quickly!

Jen! Freezer meal ideas ... some of them are on my Pinterest. Jessie introduced me to some amazing homemade granola bars that have become a staple in our house, so check her blog for those. As far as main dishes, Clay and I are loving chicken cordon bleu and sweet lime enchiladas, both on my Pinterest :) My friends and I just exchanged a new batch of meals (including some gyros Jessie made and look delish) so I'll let you know how all of those are. Let me know what yummy meals you come across too!

Those energy bites have become my new favorite too! My problem is I want to eat the whole batch in one sitting. Seriously, they have changed my life!
